Creamy, cool: Pesto Zoodles

Hey everyone it’s that time again. The weather is warmer, we are wearing less clothing and more skin is showing.

As you know Joy and I love to eat healthy but with so many holiday parties last winter and then Easter … I would have to say all we did was eat through the entire season. Ugh!

I (Judy) am very excited to share this new healthy recipe with you. I know you are going to love it! It is a pesto sauce that is creamy, velvety and truly luscious and tastes like it would be full of calories. It is not!

It is an avocado-spinach pesto with zucchini noodles which are called Zoodles. You will have to get a spiralizer for the noodles to come out perfect.

We serve it cold, so it is perfect for lunch or you can add cooked chicken and make it dinner! The avocado makes it rich and creamy and is a good-for-you fat, the spinach is full of nutrients and fiber, and I threw in walnuts for a boost of protein, but you can use almonds, pine nuts or any nut you like!

Zoodles

2 small zucchini, spiralized (one per serving)

 

Pesto Sauce

one ripe avocado

1 fresh clove of garlic

1/2 cup of fresh baby spinach leaves

juice of 1/2 lime

1/4 cup of avocado oil or olive oil

small handful of walnuts or nuts of your choice

6 cherry tomatoes or grape tomatoes cut in half

Put all sauce ingredients (except tomatoes) into a blender, or NutriBullet and pulse till creamy and desired consistency. You can add a bit of water if you need to thin it. Toss with the Zoodles, add cherry tomatoes and serve! You can sprinkle with red pepper flakes if you wish!! Enjoy.
