Breakfast on the go!

We are still thinking healthy and eating right is definitely the way to go. As Judy and I finish our certification in Health & Wellness we have been experimenting with so many new ingredients and are excited to share them all with you. The best way to start the day is with a satisfying breakfast, the first meal of the day and the most important meal. We all have the same excuses and say the same things every morning. “I don’t have time to eat”, “I don’t like cereal”, “I’m not hungry when I wake up.” There are plenty of reasons that people skip breakfast … but not anymore!

Quinoa is a highly nutritious carbohydrate that is not only going to help you stay lean, but is great at keeping  your energy levels high. It has so many textures all rolled into one. It’s fluffy, creamy and  crunchy with a nutty flavor. Quinoa is mostly thought of as a grain, but is actually seed-like, a relative of leafy green vegetables, like spinach and swiss chard. It can be prepared savory also with anything from roasted vegetables to spicy serrano chiles. Served hot or cold we just love this, so put down that bowl of oatmeal and try something new!

We have made this scrumptious breakfast even easier by filling half pint jelly jars, enough for a few days, for a quick grab “n” go and easy storage for the fridge! Let’s eat!!!

Breakfast on the Go!

3 cups white quinoa, cooked according to package directions

1/2 -1 cup vanilla almond milk, (we used Silk brand), use more if you like a loose cereal

2 tablespoons agave or honey

sautéed apples, recipe follows

a sprinkle of roasted nuts, almonds, pecans or walnuts, optional

Yogurt of your choice   

Mix together the cooked quinoa, milk and honey to taste. Add fruit and a sprinkle of nuts. Be creative, add anything you like. It’s your creation — have fun! In a Mason jar or small glass, layer in yogurt, quinoa and apples, YUM!!!    

   Spiced Apples                                         

4 apples, skinned and cubed

2 teaspoons apple pie spice

1 teaspoon vanilla

1 tablespoon dark brown sugar

1 cup apple cider or apple juice

In a small pot, add cubed apples, apple pie spice, vanilla, sugar and apple cider. Bring to a boil and cook over medium heat till the apples are soft and the cider has boiled down to create an almost syrupy consistency. Let the apples cool before making the parfait.
