Local student honored by town for winning nationwide Lunchtime Challenge award

Cecelia Vinas was honored by the town of Fairfield at a recent Board of Selectmen meeting for being the only contest winner in Connecticut’s to received the nationwide 2014 Healthy Lunchtime Challenge & Kids State Dinner Award.

The award is sponsored by Epicurious and First Lady Michelle Obama as part of the Let’s Move! Campaign, which encourages the next generation of Americans to take a leading role n combating obesity.

Wanting to make a burger healthy, Cecelia came up with the quinoa chicken burger with kale and potato chips. It includes all the food groups with a spotlight on fruits and vegetables.

Cecelia’s recipe was selected by a panel of 54 judges, who chose 54 winners ranging in age from 8 to 12. All of the winners attended the state dinner at the White House, where they met President Barack Obama and his wife.

Cecelia has been filmed making her dish by Time for Kids, and in the coming months, will do service announcements with a celebrity chef. She is also doing a cooking demonstration at Yale-New Haven Hospital in September. Her recipe is included in the 2014 Epicurious Healthy Lunchtime Challenge Cookbook.

Cecelia is a student at Fairfield Woods Middle School. She plays ice hockey for the Southern Connecticut Stars in Milford and enjoys such outdoor activities as fishing, camping and archery.
