Fairfield business has ‘best cupcakes’

Monroe resident Diane Mercado, owner of Pink Cupcake Shack in Fairfield, was awarded “Best Cupcakes” in Moffly Media’s ninth annual “Best of the Gold Coast.” Readers from Fairfield, Westport, Greenwich, Stamford, Darien and New Canaan voted for their favorites in various categories.

Mercado opened the Pink Cupcake Shack, 1215 Post Road, in February 2011. They specialize in more than 65 flavors of cupcakes, decorative cakes, cookies and cake pops. All of the baking is made-from-scratch and the menu changes daily.

Mercado attributes the success of the shop to her supportive and friendly customers, as well as a “wonderful group” of employees, who each have an artistic side that allows them to make each item unique in their own way.

A reception was held at the Stamford Hilton on July 25 for winners to showcase their winning products. Mercado and her daughter, Kiely, attended the event with one of their cupcake displays.

Mercado and her husband, Robert, have lived in Monroe for 28 years. Their children, Joseph, Kiely and Danniel, help out in the bakery, as does her father, Roland Young, of Trumbull.
